These Brown Rice Nori Rolls are a Delicious and Nutritious Plant Based Meal

Looking for a healthy meal idea for busy weeknights? These nori rolls come together quickly, can be customized with whatever veggies you have on hand, and are so nutritionally dense - you'll feel energized and nourished after eating these.
Nori seaweed is packed full of trace minerals including iodine with is needed for healthy thyroid function. The black sesame tahini dipping sauce adds a little extra pizazz and also makes the rolls more filling and satisfying. 
If you haven't yet tried black sesame tahini, this unique seed butter offers a different twist on your classic beige tahini - it's made with un-hulled black sesame seeds instead of white. Not only do these seeds have a robust nutty flavor, but they're also a superfood - offering plentiful minerals like calcium, iron, magnesium, and copper, fiber, healthy fats, and plant-based protein. 
For the inside of your nori rolls, your options are endless. Try using brown rice as a more nutritious alternative to traditional white sticky rice - it has more vitamins, minerals, and fiber. For veggies, you can use thinly sliced carrots, cucumber, bell pepper, sprouts, greens, cilantro, sweet potato, or even grilled tempeh. Just don't forget the avocado - it's a must.

The Recipe 

Filling
Cooked brown rice - add just a dash of rice wine vinegar and raw honey to create more traditional sushi rice
Your Choice of Veggies - we used thinly sliced carrots, cucumber, bell pepper, avocado and cilantro

Raw Nori Sheets
Black Sesame Tahini Dipping Sauce 
Ingredients
1. tsp lime juice
2 tsp toasted sesame oil
1.5 tsp nama shoyu or soy sauce
Steps
1. Mix dipping sauce ingredients in a bowl until smooth. 
2. Lay your nori sheet on either a bamboo sushi mat or a dry, clean, flat surface, then spread a thin layer of rice over the top. Leave an inch or so bare at the very top of your nori sheet, and apply some water to this section - this will help seal your roll once it is formed.
3. Add veggie slices and avocado on top of the rice in the center of your nori sheet, and carefully roll it up as tightly as possible.
4. Using a very sharp or serrated knife, cut your roll into sections very carefully. Be mindful not to apply too much pressure which can end up causing your sushi rolls to fall apart.
