Kombucha originated from China during the Tsin Dynasty where it was referred to as "Godly Tsche" and was used to, among other things, improve digestion and promote longevity*! Chlorella is a single celled blue green algae that is incredibly rich in all nutrients needed by the human body. It is nearly 60% protein by weight and contains high levels of beta carotene, iron, b vitamins, trace minerals and chlorophyll! It offers antioxidant capabilities, helps bind and remove heavy metals from the body, and can help elevate pH to a more alkaline level. We find that honey works best for this recipe but feel free to use your liquid raw sweetener of choice.

This is a fantastic summer time appropriate recipe by Gena Hemshaw that turns out almost like a combination of sorbet and ice cream. Cool, sweet, super creamy yet light and fruity at the same time. Gena says, "The slight hint of ginger pairs beautifully with the blueberries, and the color is phenomenal." She served hers up with fresh blueberries on top!

    Lush mixed salad greens rich in minerals, phytonutrients and chlorphyll pair with tender, marinated and mushrooms. Place your fresh mushrooms (farmers market or wild harvested would be ideal!) in a marinade made with high quality cold pressed olive oil (such as Bariani) add a dash of agave or honey, and a splash of tamari, coconut aminos or unpastuerized nama shoyu. After marinating, place your mushrooms in the dehydrator which will cause the flavor and texure to condense even more as if they've been sauteed. Easy to prepare and richly flavorful, your dinner salad is served!

    What's the key to the perfect green soup? You must have an acid, a salt, and a fat in order to balance the often-times strong flavor of greens. If you've ever made a green soup and couldn't really enjoy it due to a bitter taste than this recipe will be a great tried and true base to work with. Heather Pace combines mild flavored spinach with a bit of celery and 3 different fresh herbs. For an acid she uses apple cider vinegar, the fat is avocado, and for salt a pinch of unrefined sea salt does the trick or you can use your favorite sea veggie!
