Orange and Almond Tahini Fudge Cups

Rich tahini fudge cups that are topped with orange candied almonds, strawberry and chocolate. A decadent treat or a perfect dessert.

Ingredients

Rich tahini fudge cups that are topped with orange candied almonds, strawberry and chocolate. A decadent treat or a perfect dessert.

Ingredients (serves 4)

For the Fudge Base

10 dates, soaked in hot water, skin removed
1 tbsp raw honey
1 tbsp melted coconut oil
3 tbsp tahini
3/4 cup coconut cream (top hard part of a refrigerated can of coconut milk)

For the Candied Almonds

1/4 cup almonds
Juice of one small orange
1 tsp grated orange rind
1 tbsp raw honey

For the Assembly

Fudge cups
Candied almonds
Strawberry jam
Dark chocolate

Instructions

In the bowl of a food processor, combine tahini, skinned dates, coconut cream, honey and coconut oil. Pulse until smooth and completely incorporated, scraping as often as necessary.
To candy the almonds, heat a small, non-stick pan over medium heat and add almonds. Toast lightly and then add orange juice, orange rind and honey. Continue to cook over medium heat, stirring often until they are sticky and fragrant. Pour onto a piece of baking paper and place in the fridge to harden.
Pour into paper lined muffin cups and top with four or five candied almonds, gently placed in a cluster in the center.
Put the cups in the freezer to harden.
Just before serving, drizzle with strawberry jam and top with chocolate curls.
