Cultured foods have been consumed by humans since ancient times, and for good reason. Their list of health promoting benefits is extensive and getting more attention as people recognize the correlation between our health and the types of bacteria we consume. This is a great recipe to get you started on your path to making cultured veggies in the convenience of your own home.

Ingredients

Step 1:
9 lbs of Chinese Cabbage
9Tbs Coarse Salt
2 Tbs Cayenne
32 cups cold water

Step 2:
1 cup of garlic (diced)
1/4 cup grated ginger + 1 Tbs ground ginger (ginger powder)
10 cayenne (dry pod cut up)
About 8 bundles of green onion, chopped
1/4 cup paprika
1 Tbs cayenne powder
2 Tbs sea salt
4 Tbs raw sugar
4 cups water

Directions

1) Mix ingredients in Step 1 today and Let sit for 24 hours

2) Drain and then add ingredients from Step 2

3) After mixing let sit for another 24-48 hours then put in root cellar, or a cool dry place.
