This refreshing salad by Priscilla Soler of Gastrawnomica is super easy to make, low-fat, high fiber, super flavorful and seriously delicious. One of those meals you just HAVE to try before the summer ends. Serve on sprouted corn tostadas, romaine lettuce (to make tacos) or just gobble it up all by itself!
Ingredients 1 large jicama, peeled and cubed (about 3 cups)
3 small Ataulfo mangoes, cubed (around 2 cups)
2 cups tomatoes, in small cubes
1/3 cup fresh cilantro, finely chopped
1 large lime, juice
1 large avocado, cubed
1/4 cup red onion, finely chopped
Sea salt to taste
Directions 1. Mix all ingredients in a large bowl except for avocado.
2. Mix well and let it sit 10-15 minutes prior to eating in your fridge so that all flavours get absorbed.
3. Add avocado before serving and mix well again.
