Edamame Spinach Dip

Looking for ways to increase your protein on a vegan diet? Try out this recipe for a high raw edamame spinach pate! Very rich in protein indeed with loads of amino acids from fresh spinach leaves, edamame soy beans (always buy organic GMO free!), and raw tahini. The spices in this recipe are a delicious blend of garlic, cumin, parsley, and chili pepper flakes. This makes a wonderful dip for raw veggies, a filling for lettuce wraps, a topping on a green salad or stirred into a raw soup (such as creamy avocado dill!) A definite YUM!


2 cups shelled edamame

2 cups raw spinach

4 Tbsp fresh lemon juice

3 Tbsp tahini

3 Tbsp cold pressed extra virgin olive oil
