THE BEST Raw Vegan Chocolate Brownies
Difficulty 5 minutes Serves 12-18

Just a few key ingredients make this recipe by Amanda Brocket of The Raw Food Kitchen both wickedly delicious, and also easy. The key is to work with the flavors of raw cacao so you have a yummy sweet chocolate icing and a nice bitter chocolate bottom. Gluten-free, dairy-free, and 100% plant-based. Eat fresh or cut them up into small bites and enjoy snacky sized brownie bites straight from the freezer.

Ingredients

Brownie base:

2C walnuts

1C cashews

2T coconut nectar

1/2C cacao powder

1C Medjool dates soaked 10 mins to soften, drained

pinch salt

Icing:

1C Medjool dates soaked 10 mins to soften, drained

1/2C cacao powder

1/4C coconut oil warmed till liquid

4T coconut nectar or 3 squirts Stevia

1/4C filtered water (if needed)

pinch Himalayan crystal salt

Directions

Brownie Method:

1. In a food processor, process nuts until chunky breadcrumb like, then add dates and process until combined and the mixture starts to “stick”.

2. Add cacao and process until mixed through.

3. Press mixture into a nonstick slice tray and press down until packed firmly. Place in fridge while you make the icing.

Icing Method:

1. In a magic bullet blender or high-speed blender blend all ingredients until smooth. Add some water if needed.
2. Spread icing onto the base and smooth out. Place in freezer to set for 15 – 30 mins, and then keep in the fridge for when the brownie craving hits!
